If you miss the live demonstration at the Bite of Seattle, it will be available on Comcast “On Demand” this Fall. For my demonstration, I will be preparing Piperade, the pepper and tomato compote that is one of central elements of Basque cooking. I will also show how to use it in making Oeufs Piperade (Eggs with piperade and air cured ham) and Cabillaud en Piperade (Cod filet and clams simmered with piperade, chorizo and dandelion greens).
