Farigoule is the provençal word for thyme and this traditional liqueur is full of the sunny flavors of that region. It is great as an aperitif over ice or as an after dinner digestif.
Ingredients:
- 3 oz fresh thyme
- 1 piece dried orange peel
- 3 allspice berries
- 1 pinch anise seeds
- 1 strip fresh lemon peel
- .75 liters vodka
- .25 liters of water
- 100 grams sugar
Note:
Use the best quality vodka you can afford. I used Ketel One.
Preparation:
- Place all the ingredients except the water and sugar in a clean quart jar. The ingredients should be completely submerged in the vodka; use a weight on top if necessary. Let macerate for 2 months in a dark, cool place.
- Combine the sugar and water in a saucepan, bring to a boil, stir well, then return to the boil. Remove from heat.
- Strain the vodka through a fines conical strainer lined with cheesecloth. Add this to the sugar water.
- Pour this mixture into clean bottles, cork or seal well. Leave for 2 months before tasting.
